Slurry the starch in approximately 20% of the total water needed for the batch. To facilitate homogeneous dispersion, dissolve or dilute the "Arquad" salt in water and add it to the slurry. Add sufficient water for the desired concentration of the final product. While agitating the batch rapidly, heat to 207-208F. Continue agitation and cook at this temperature for 30 additional minutes. Add the sodium chloride a few minutes before heating is discontinued and, after the heat is cut off, replace water lost through evaporation. Continue rapid agitation while the batch is cooled to 100-110F for bottling. |
