Preparation Method 1: For ease of handling and for complete stabilizer hydration, the Methocel gum and xanthan powders should be dispersed in hot water (160-195 F) 0.2 to 0.4 of the total water and agitated thoroughly to "wet-out" and separate the individual particles.
The remainder of the water should be added as cold water and agitation continued until all of the particles of Methocel are completely hydrated. This ordinarily requires 10-30 min.
The fat and other emulsifiers should be comelted at minimum temperatures and added with sufficient agitation to disperse well into the water. It may be necessary to raise the temperature of the water to prevent "shock out" of the oil. continue mixing until a uniform mix is obtained. The sweeteners, salt, and flavoring are then added and agitated until completely dissolved.
This mix may then be pasteurized at 165 F for 30 min under mild agitation. The pasteurized mix can be homogenized into a two-stage homogenizer at 2000 psi in the first stage and at 5 |
