配制方法: Premix Part A and add to premixed sugar and shortening from Part B.
Mix Part B ingredients together and cream well. Add Part C ingredients last. Mix for 8 min at a slow speed. Allow dough to ferment in bowl for 2 h at 75-80 F. Sheet to 0.25-in. thick. Cut crackers approximately 1 in. x 3 in. Bake at 375 F for 5 min. Reduce to 275 F and bake for 10 min.
Notes: Coarse sugar and egg wash can be applied to top before baking.
Sesame seeds can be used in formula and on surface. Dough can be chilled overnight and held for later use. More raisins may be added to dough by using 10% chopped raisins. These are not to exceed level of raisin paste.
