Mix all ingredients thoroughly. Pasteurize by high temperature short time method. Dry using as low an outlet temperature as possible.
This formulation, using orange juice concentrate (42% solids) is made up at 40% total solids. It is dried on a Niro utility dryer to a 3% moisture level then cooled and packaged. Using a dryer with cold jacket chamber walls may allow the use of a higher percentage of orange juice.
Usage: Maltrin M100 maltodextrin is an excellent carrier for hard-to-dry fruit juice such as orange juice.
