配制方法: With mixer turning, add salt and "5-SD" and blend in melted hydrogenated vegetable shortening. Heat "DEE-S" paste and autolyzed yeast extract to about 160F and blend in. Premix caramel with MSG and seasonings and add to preceding. Mix thoroughly after all ingredients are in.
The consistency of this soup base may be changed by increasing or decreasing the amount of fat in the formula.
If a granular product is desired, spread the mixture on trays and to a depth of one-half inch. Moisten the batch with steam in a proofing cabinet. Dry at 150F to less than 2% moisture. Put dried material through a granulator.
This base is used at the rate of 3/4 ounce to a quart of boiling water.
