The amount of hydrogen peroxide to be used will depend, within limits, on the type of starch and onn the desired end viscosity.
Cornstarch generally is more resistant to conversion than, e.g., tapioca and some other starches. Therefore, higher concentrations of conversion chemicals are needed for the same end viscosity. Approximately 0.8 to 1.2% hydrogen peroxide of 35% concentration will be required to produce cornstarch pastes of suitable viscosity, the amount of hydrogen peroxide being based on the weight of the dry starch. In the case of tapioca, approximately one half to two thirds of these amounts will suffice in most cases.
It is advisable, although not absolutely necessary, to add the hydrogen peroxide last. Its action is promoted by the copper sulfate catalyst, and the starch should be given a short time to absorb the catalyst before coming into contact with hydrogen peroxide.
To avoid localized reaction, the hydrogen peroxide should be diluted with about ten to twenty times its volume |
